A Blissful World of Flavorsfor You
Ever since I was a child, I was skillful with my hands and at one
point considered becoming an architect.
On the other hand, inspired by my
mother, a skilled cook, I was already making Japanese egg rolls by the time I
was in kindergarten.
My fundamental motivation has always been to see others
smile, and that remains unchanged to this day.
Although I started out as a pâtissier, I picked up skills from chefs during my training days and have since been refining my cooking. Some may wonder, “A pâtissier cooking savory dishes?” However, for me, both desserts and savory dishes are equally fields for creativity, having honed the intuition that “these ingredients will create this flavor if combined in this way.”
I will continue to explore new frontiers of flavor and guide you into the world of exquisite culinary delights.
Kakimoto Akihiro
Career
Born in Uji City, Kyoto Prefecture.After serving as sous-chef at Kyoto Royal Hotel and Kobe Confectionery S-Pâtisserie, he opened ASSEMBLAGES KAKIMOTO in Kyoto’s Teramachi district in 2016.Participated in two categories of the World Pastry Cup, Coupe du Monde de la Pâtisserie, and represented Japan in the World Chocolate Masters, the world’s premier competition to determine the top chocolatier. Advanced through the national qualifiers for both competitions and achieved excellent results at the world stage.

Creative Use of
Ingredients
& Innovative Flavor Construction
Sweets are made by combining butter, sugar,
eggs, and flour as a base, with additions such as chocolate and fruit, then baked or
processed to last longer. As such, when strawberries or peaches are used in cakes or
chocolates, their flavor and aroma become less intense compared to when eaten fresh.
Kakimoto has been dedicated to finding ways to compensate for this with fruit juices
and herbs, and creating flavors with striking contrasts.




He competed in the World Pastry Cup, Coupe du Monde de la Pâtisserie, and the World Chocolate Masters, which evaluates taste, technique, and artistry in chocolate, thoroughly pursuing the optimal combinations and balance. He has crafted delicious creations that have impressed competitors from around the world. The inspiration and techniques he cultivated on the world stage continue to drive Kakimoto’s creations, infusing each piece with life. Sweets incorporating Japanese ingredients such as myoga and aged vinegar are unique creations that can only be found at our restaurant. Kakimoto’s unwavering wish is not only to offer delicious food but also to deliver surprise and delight to his customers.

Alongside the cakes and chocolates that have established Kakimoto’s reputation, the shop also offers baked goods and bread. Sweets chosen from the display case can be enjoyed at the counter located at the back of the shop. There are also desserts available exclusively for eat-in, for you to savor.

This is a restaurant that houses a gelato and baked treats shop. Guests can savor gelato showcased at the World Pastry Cup and seasonal flavors. For lunch, we serve Kakimoto’s original pizza and appetizers, followed by our signature gelato for dessert.
